Triticale Flours: Composition, Properties and Utilization
نویسندگان
چکیده
Triticale (X Triticosecale Wittmack) is an artificial hybrid of wheat (Triticum sp.) and rye (Secale sp.) first bred in laboratories during the late 19 century. In little more than a century, triticale has developed from a biological curiosity to a practical crop. Plant breeders have made efforts to overcome main problems of triticale: preharvest sprouting, susceptibility to diseases, sensitivity to photoperiod, and production of shriveled grains. Triticale world production is in constant growth, in 2005 15,000,000 t were produced all over the world. Today, it is used as forage or grain. The chemical composition of triticale has similarities with wheat and rye, showing intermediate values in many of the parameters. Due to presence of rye proteins, triticale flours have low gluten content, deficient gluten viscoelasticity, and, consequently, produce breads with inferior quality than wheat. However, triticale is still an alternative for human food, essentially in areas where soil and climate conditions limit wheat growth. In Latin America triticale performs well in southern semi-arid regions and in Brazilian acid soils. In some parts of eastern and northern Europe where wholemeal flours are used today for breadmaking, triticale breeding is increasing progressively. In this article we approach the aspects linked with the utilization of triticale flours for human consumption. _____________________________________________________________________________________________________________

Comparative Analyses of Physicochemical and Technological Properties of Triticale, Rye and Wheat
Wheat, rye and triticale samples were evaluated in terms of physicochemical and technological properties. The triticale samples had higher susceptibility of sprouting compared to rye. The milling value of wheat and triticale samples was over 70, suggesting good milling properties and the ability to provide flours with low extraction rates. Of all studied grains, triticale had the lowest dough d...
متن کاملEffect of Lepidiumsativum Seed Gum on the Physicochemical and Sensory Properties of Cup Cake based on Triticale-Wheat Flour
Background and Objectives: One of the ways to increase nutritional value and reduce wheat consumption in baking products is to use alternative flours with better nutritional properties than wheat. Due to population growth and shortage of water resources for sufficient wheat production, it is necessary to produce these hybrid products that have higher nutritional properties and make them more di...
متن کاملThe Application of FT-IR Spectroscopy for Quality Control of Flours Obtained from Polish Producers
Samples of wheat, spelt, rye, and triticale flours produced by different Polish mills were studied by both classic chemical methods and FT-IR MIR spectroscopy. An attempt was made to statistically correlate FT-IR spectral data with reference data with regard to content of various components, for example, proteins, fats, ash, and fatty acids as well as properties such as moisture, falling number...

Comparison of different methods of producing bambara (Voandzeia subterranean L. Thou) flours for preparation of ‘moin-moin’ Bambara nut was subjected to different treatments prior to mechanical dry dehulling and milling into flours. Physicochemical properties of the flours and sensory attributes of moin-moin prepared from the flours were compared with that of moin-moin from fresh pastes from co...

This study was performed to investigate the chemical and rheological properties of composite flours prepared by using whole wheat flour (Triticum aestivum), whole maize flour (Zea mays) and whole sorghum flour (Sorghum bicolor). Seven blends were prepared by homogenously mixing maize and sorghum flours with wheat flour in the percentage proportions: 0:100, 10:90, 20:80, 30:70, 15:15:70 (MF: WWF...
